In this offal recipe, we wanted to share with you a very delicious tripe dish with chickpeas. Tripe meat has a very important place in Turkish cuisine. Along with the tripe food, tripe soup also has an important place in Turkish recipes. Tripe with chickpeas can be made from both lamb tripe and beef tripe. However, it is obivous that there will be taste differences between the dishes. No matter what tripe it is made with, our recipe is a very delicious offal dish, is worthy of your mouth in taste and appearance. It is also known that some minerals in tripe soup and tripe dishes strengthen the immune system. Beef Tripe and Chickpeas Stew Recipe Tips
Both lamb tripe and beef tripe can be used to make this dish. However, since lamb tripe is thinner than veal tripe, İf you use veal tripe, you will get more meat flavor and the dish will be more delicious.
Since it is very troublesome to clean the tripe, you can buy cleaned tripe from your butcher.
Even if you buy ready cleaned tripe, there will be some odor in the tripe. Before starting the recipe, you should definitely soak the tripe in boiling water with 1 tablespoon of vinegar for 30 minutes.
You can use any type of vinegar you want as vinegar. We used grape vinegar in our recipe.
Adding 1 tablespoon of wheat flour to the recipe will make the food thicker.
It is very important that you soak the chickpeas one night before in order to cook the chickpeas more easily , to be more delicious and to prevent the gas that will occur after consuming the chickpeas.

Beef Tripe Recipe Ingredients
500 gr Chopped Beef Tripes
1 Cup Boiled Chickpeas
1 Chopped Onion
1 Tablespoon Tomato Paste
Half Cup Olive Oil (100 ml)
1 Tablespoon Wheat Flour
5 Cloves Garlic
2 Tablespoons Vinegar
Half Bunch Chopped Parsley
1 Teaspoon Ground Red Pepper
1 Teaspoon Salt
2 Cups Water (400 ml)
Preparation of Chickpeas With Cow Tripe Recipe
Put 500 gram of beef tripe in a pot.
Add 1 tablespoon of vinegar.
To eliminate the smell of the tripe, add boiling water to the pot to cover all tripes and leave it in boiling water for 30 minutes.
Strain the beef tripes using a strainer.
Transfer the beef tripes to the pressure cooker.
Add 5 cloves of garlic to the pot.
Add 1 tablespoon of vinegar.
Add enough boiling water to completely cover the chopped tripes.
Close the lid of the pressure cooker and boil the chopped beef tripes for 1 hour and 45 minutes.
Pour half a glass (100 ml) of olive oil into a separate pot.
Add 1 chopped onion to the oil and start frying.
Add 1 tablespoon of tomato paste.
Put the boiled tripes in the pot.
Add 1 tablespoon of white wheat flour.
Add 1 cup of boiled chickpeas.
Add 1 teaspoon of ground red pepper.
Add 1 teaspoon of salt.
Add 2 cups (400 ml) of boiling water.
Cover the pot and cook the dish untill the chickpeas are tender.
When the chickpeas are soft, transfer the food to the serving plate.
Serve hot.
