In the summer season, peppers and eggplants grow naturally when the sun show itself. Of course, a vegetable which is grown in season is more delicious than a vegetable that is grown in a greenhouse. That's why stuffed eggplants and stuffed peppers are so delicious in summer. In addition, both in summer and winter, stuffed potatoes or stuffed onions can be made. Some women in Anatolia dry the peppers and eggplants which is grown in summer in the sun. The reason for this is to use dried peppers and dried eggplants for stuffing in winter. We often see the stuffed eggplants recipes and stuffed peppers recipes in Gaziantep cuisine. Some women prefer to freeze them by putting capia peppers in the freezer in summer. After thawing some frozen capia peppers they take out of the freezer in the winter, they make the stuffing and serve them to their loved ones.

First of all, when choosing bell peppers, you should pay attention to their freshness. If the pepper stalk is green, it means it has been plucked from the pepper branch new. In addition, the pepper should be hard and bright in appearance. Being firm and shiny means that the pepper is fresh.
If you make the recipe for stuffed capia peppers in the summer, the food will be more delicious as the capia peppers will grow naturally in the sunlight.
Stuffed peppers can also be made by roasting the rice in a separate pan. However, we prefer to cook the rice in the oven, without frying it in a pan, because we think it is more delicious and light.
Instead of capia peppers, summer vegatables such as potatoes, eggplants and onions can also be preferred for stuffing.
If you use lean ground beef in the stuffed peppers, your meal will be lighter.
Your meal will be much more delicious if you use tomato sauce as well, which we make from fresh tomatoes in summer.
You can store the cooked stuffed peppers in the refrigerator and consume easily for 1-2 days.
You can serve stuffed peppers with garlic or plain homemade yogurt, depending on your preference.

Stuffed Pepper Ingredients
500 gr Capia Peppers
3 Chopped Onions
1 Cup Rice (200 ml)
2 Dessertspoons Tomato Paste
200 gr Lean Ground Beef
1 Teaspoon Salt
1 Teaspoon Black Pepper
1 Teaspoon Red Pepper Flakes
1 Dessertspoon Dry Mint
Half Bunch Chopped Parsley
Half Cup Olive Oil (100 ml)
Half Cup Tomato Sauce (100 ml)
For Closing Stuffed Peppers
Onion Slices
For Making Tomato Sauce
1 Cup Water (200 ml)
1 Dessertspoon Tomato Paste
Half Cup Olive Oil (100 ml)
For Garnishing
Some Lemon Slices
Some Chopped Parsley
How to Make Stuffed Peppers Recipe ?
Firstly, put 1 cup (200 ml) of white rice in a deep bowl.
Add 3 chopped onions.
Add 2 dessertspoons of tomato paste.
Add 200 gram lean ground beef.
Add 1 teaspoon of ground red pepper.
Add 1 teaspoon of ground black pepper.
Add 1 dessertspoon of dried mint.
Add 1 teaspoon of salt.
Add half a bunch of chopped parsley.
Add half a glass (100 ml) of homemade tomato paste.
Add half a glass (100 ml) of olive oil.
Mix all the ingredients well with the help of a spoon and with your hands.
Fill all the capia peppers one by one with the mixture you have prepared.
Cover each stuffed pepper with an onion slice.
Arrange all the stuffed peppers in a deep pot.
Prepare the sauce that we will pour over the peppers in a separate bowl.
Add half a glass (100 ml) of olive oil.
Mix well untill the tomato sauce thickens.
Pour the tomato sauce that you prepared over the peppers in the pot.
Cook the peppers in the pot on medium heat for 30 minutes.
Add 1 glass of water (200 ml) as the peppers will lose water in the pot.
Take the peppers in the pot into the oven to cook them in the oven once again.
In the meantime, add 1 glass of water (200 ml) again.
Bake the peppers in the pot in the oven at 200 degrees for 30 minutes.
Serve the stuffed capia peppers baked in the oven with garlic or plain homemade yogurt.
