Yogurt Recipe Tips
In order to make natural yogurt, you should buy fresh farm milk from the farmers who feed cows instead of ready-made milk sold in the market.
Make sure that the kitchen equipment you will use during the pasteurization process and fermentation process is clean.
Strain the milk with the help of a clean cloth to get rid of any foreign matter that may be present in it.
After buying the milk, you should definitely pasteurize it by boiling it in order to destroy the harmful bacteria in the milk.
To pasteurize fresh cow's milk, the milk temperature must be between 63-90 degrees. If you do not want the milk proteins to be damaged, you can pasteurize them for 30 minutes at low temperatures such as 63-65 degrees.
If you ferment the boiled milk with the natural yogurt you have made before, you will still obtain natural yogurt.
You should definitely check the temperature before fermenting the milk. If your finger can withstand the heat of the milk, it means the milk is ready to ferment.
After fermenting the milk, wrap the glass bowl in which you put the milk with a few towels to keep the milk warm.
Your yogurt will be ready when you keep the warm milk in the refrigerator for 1 day. However, if you keep yogurt in the fridge more, you get more harder yogurt. And the consistency of the yogurt will be better.
