What is Turkish Rice Pudding?
Perhaps the easiest of dessert recipes, the most nutritious of milk desserts, of course, is the rice pudding recipe. When it is placed in clay pots and baked in the oven, it becomes baked rice pudding. This easy dessert that my mother has made since my childhood has a special place for me. Although it is very easy to make, of course, some tricks must be followed in order to make homemade rice pudding in its full consistency. Rice pudding is a light milk dessert which is made by combining milk, granulated sugar and rice. The ingredient that gives the color of rice pudding is milk. Rice pudding, which is known as unique to Turkish cuisine, is also frequently made in the world, especially in Arabian cuisine, Iranian cuisine, Indian cuisine and Asian cuisine. Rice pudding is loved by many people because it is a light dessert and relieves the stomach after meals. Rice pudding can be consumed after being shared into dessert bowls and cooled, or it can be baked in the oven after being placed in clay pots and consumed. In this case, the name of the rice pudding is baked rice pudding. The most important feature of the baked rice pudding is that it is slightly burnt on the top and it is served by sprinkling hazelnut powder on it. Normal rice pudding is usually sprinkled with cinnamon powder or coconut powder. The rice pudding is known as sütlaç in Turkish cuisine. Sütlaç word comes from two words in Turkish which are sütlü and aş. Sütlü means milky and aş means meal in Turkish. So sütlü and aş words unites and the name of the dessert becomes sütlaç which means milky meal. According to the information narrated from ancient times, a milky meal was prepared with a mixture of milk, sugar and rice for a person who had a stomachache. It is offered to the sick person to eat this milky meal as a medicine. From that day on, this milky meal was called sütlaç in Turkish or rice pudding in English. What about how do you make rice pudding? The first step of making rice pudding is to boil the rice in the pot until it absorbs its water. Then, milk is added to the rice. Elsewhere, the starch is mixed with cold milk or water and added to the milky rice mixture and mixed again.

Homemade Rice Pudding Ingredients
5 Cups of (1000 ml) Cow Milk
Half Cup of (100 ml) White Baldo Rice
4,5 Cups of (900 ml) Water
Slightly More Than Half Cup (100 ml) Sugar
For the Starch Mixture
3 Tablespoons of Wheat Starch
1 Cup (200 ml) of Milk
How to Make Rice Pudding?
Wash half cup (one hundred mililiter) white baldo rice with plenty of water.
Put the washed rice into a deep pot.
Pour four and a half cups (nine hundred mililiter) water into the deep pot.
Boil the white baldo rices about twenty minutes.
When the rices absorb all its water, add five cups (one thousand mililiter) cow milk into the pot.
Boil this milk mixture about fifteen minutes this time.
Mix three tablespoons of wheat starch with one cup (two hundred mililiter) milk in another bowl.
Pour wheat starch mixture into the deep pot.
Add white sugar which is slightly more than half a cup (one hundred mililiter).
Boil the rice pudding fifteen minutes more.
Remember to stir the rice pudding continuously for not to burn the bottom of the dessert.
Share the rice pudding into suitable dessert cups.
Let the rice pudding desserts cool outside.
Put the desserts to the fridge to get hard.
Serve the rice puddings cold.
You can sprinkle some coconut powder or cinnamon powder on the desserts before serving.
